Ingredients

  • 2.5 to 3 lb tri-tip roast
  • 2 tbsp olive oil
  • 3 tbsp Chow's Blend The Santa Maria Remix
  • Optional: additional seasoning for finishing

Instructions

  1. Pat the tri-tip dry.
  2. Lightly coat with olive oil.
  3. Season generously on all sides with The Santa Maria Remix.
  4. Let rest for 30-60 minutes while the Traeger preheats.

On the Traeger

  1. Preheat Traeger to 225°F.
  2. Place tri-tip directly on the grates.
  3. Smoke until internal temperature reaches 125°F.
  4. Remove tri-tip and increase grill temperature to 450°F.
  5. Return tri-tip to grill and sear 3-5 minutes per side.
  6. Pull at: 130°F for Medium Rare
    135°F for Medium
  7. Rest for 10-15 minutes.
  8. Slice thinly against the grain.

Pro Tip

After slicing, sprinkle a small amount of The Santa Maria Remix over the meat for an extra pop of garlic, pepper, rosemary, and smoke.
