Ingredients
- 2.5 to 3 lb tri-tip roast
- 2 tbsp olive oil
- 3 tbsp Chow's Blend The Santa Maria Remix
- Optional: additional seasoning for finishing
Instructions
- Pat the tri-tip dry.
- Lightly coat with olive oil.
- Season generously on all sides with The Santa Maria Remix.
- Let rest for 30-60 minutes while the Traeger preheats.
On the Traeger
- Preheat Traeger to 225°F.
- Place tri-tip directly on the grates.
- Smoke until internal temperature reaches 125°F.
- Remove tri-tip and increase grill temperature to 450°F.
- Return tri-tip to grill and sear 3-5 minutes per side.
- Pull at: 130°F for Medium Rare
135°F for Medium - Rest for 10-15 minutes.
- Slice thinly against the grain.
Pro Tip
After slicing, sprinkle a small amount of The Santa Maria Remix over the meat for an extra pop of garlic, pepper, rosemary, and smoke.
